New to Kaiza, we welcome our Sake Tasting Flights. Perfect for beginners, featuring three 30ml glasses, each showcasing the distinct flavours of premium sake.


What is Sake?

A traditional Japanese rice wine, crafted through a unique fermentation process. First, polished rice grains are washed and soaked to remove impurities and enhance flavour. After steaming, the rice is combined with water and koji (a special mold) to convert starches into fermentable sugars. Yeast is then added to start the fermentation process, transforming the sugars into alcohol. This mixture, called the mash or "moromi," is allowed to ferment for a few weeks, during which the flavours develop. Finally, the mash is pressed to separate the liquid sake from the solid residue, and the sake is filtered and pasteurised before bottling. The result is a diverse range of sake styles, from dry to sweet, each reflecting the craftsmanship and expertise of our partnered brewers.
